Home Economics

One of the very best parts of homeschooling is that we can sew or bake or do crafts whenever we want. I love that. And the kids love it too! Today Emma and I made oatmeal blueberry muffins.
She made sure to follow the recipe, but we ran out of milk so we substituted water, hoping it would work!

 She loves to crack the eggs, and she is very good at it. Not a shell in the bowl!
{it really is the coolest thing to be able to walk out to the back yard and gather fresh eggs from our hens}
Then the best part - the blueberries.

She mixed it well...
 and we put them into the oven.
They were very yummy and appreciated by everyone.
 {all gone in 10 minutes}
We should have made a bigger batch with 7 people in the house.
They are not sugary or cakey. So if you like a real muffin, these are for you!

Oatmeal Blueberry Muffins
1 1/4 cups quick oats
1 cup all-purpose flour
1/3 cup white sugar
1 TB baking powder
1/2 t salt
1 cup milk {or water}
1 egg
1/4 cup vegetable oil
1 cup blueberries

mix ingredients, grease tin, bake for 25 minutes at 425 degrees F. Enjoy!
makes 12
